Chocolate Coconut Slice

Ingredients
125g Butter, melted 1 cup Soft Brown Sugar (200g) 1 egg, lightly beaten 1 tsp vanilla extract 3/4 cup Standard Grade Flour (113g) 2 Tbsp cocoa powder 1 tsp Baking Powder 3/4 cup desiccated coconut (75g) + extra to decorate Chocolate Icing 1 cup Icing Sugar (150g) 1 Tbsp cocoa powder 1 knob of Butter (approx. 10g) 1-2 Tbsp boiling water
Method
Preheat oven to 175°C bake. Grease a rectangular slice tin (approximately 19cm x 29cm) and line with baking paper. Beat butter, Soft Brown Sugar, egg and vanilla with a wooden spoon in a large bowl. Sift in flour, cocoa powder and baking powder and mix well. Stir in coconut. Spread mixture into tin and bake for 20-25 minutes, or until firm. Remove from oven and spread with icing while slice is still hot. Decorate with extra coconut. Allow to cool before cutting - slice should be slightly chewy. Chocolate Icing Sift Icing Sugar and cocoa powder into a bowl. Add butter and some of the boiling water. Mix well until smooth. Add extra water as needed to form a spreadable consistency.
