Classic Shortbread Recipe

Ingredients:
250g butter (softened)
½ cup icing sugar
2 cups plain flour
½ cup cornflour
Instructions:
Preheat oven to 150°C (300°F). Line a baking tray with baking paper.
Cream the butter and icing sugar together until light and fluffy.
Sift in the flour and cornflour, and mix to form a soft dough.
Roll out on a lightly floured surface to about 1cm thick. Cut into shapes or rectangles.
Place on tray and prick with a fork.
Bake for 40–45 minutes, or until pale golden (not brown).
Cool on a rack and enjoy! Optional: Dust with extra icing sugar once cooled.
