Classic Shortbread Recipe

Ingredients:

  • 250g butter (softened)

  • ½ cup icing sugar

  • 2 cups plain flour

  • ½ cup cornflour


Instructions:

  1. Preheat oven to 150°C (300°F). Line a baking tray with baking paper.

  2. Cream the butter and icing sugar together until light and fluffy.

  3. Sift in the flour and cornflour, and mix to form a soft dough.

  4. Roll out on a lightly floured surface to about 1cm thick. Cut into shapes or rectangles.

  5. Place on tray and prick with a fork.

  6. Bake for 40–45 minutes, or until pale golden (not brown).

  7. Cool on a rack and enjoy! Optional: Dust with extra icing sugar once cooled.
