Supplies:
2 ½ cups plain flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter, softened
1 ¾ cups sugar
4 large eggs
1 Tbsp vanilla essence
1 cup milk
Gel food colouring: blue, purple, black, pink (or any galaxy colours)
Toothpick or skewer
Mixing bowls (1 per colour)
20cm round or square cake tin
Baking paper or non-stick spray
🧁 Steps:
Preheat & Prep:Preheat oven to 175°C (fan bake 160°C). Grease and line your cake tin.
Mix Dry Ingredients:In a medium bowl, sift together flour, baking powder, and salt. Set aside.
Cream Butter & Sugar:In a large bowl, beat butter and sugar together until light and fluffy.
Add Eggs & Vanilla:Beat in eggs one at a time, then add vanilla.
Add Milk & Flour Alternately:Add flour mixture and milk in batches, alternating and mixing until just combined. Don’t overmix.
Divide & Colour the Batter:Split the batter evenly into 3–4 bowls. Add a small amount of gel colouring to each bowl and mix well.
Create the Galaxy Swirl:Drop spoonfuls of each colour randomly into the tin. Once the batter is in, use a skewer or toothpick to gently swirl the colours (a little goes a long way!).
Bake the Cake:Bake for 30–35 minutes or until a skewer inserted into the centre comes out clean.
Cool:Let cool in the tin for 10 minutes, then transfer to a rack.
Decorate (Optional but Awesome):Top with chocolate ganache or buttercream icing tinted in dark galaxy shades. Add silver sprinkles or edible glitter for stars!
