Ingredients:
- 200g plain sweet biscuits (such as Marie biscuits or digestive biscuits)
- 200g malt biscuits (such as Malt-O-Milk biscuits)
- 200g butter
- 200g sweetened condensed milk
- 200g fruit puffs or Eskimo lollies (cut into small pieces)
- Desiccated coconut (for coating)
Instructions:
1. Crush the plain sweet biscuits and malt biscuits into small pieces. You can use a food processor or place the biscuits in a sealed bag and crush them with a rolling pin.
2. In a large mixing bowl, melt the butter in the microwave or on the stovetop until it becomes liquid.
3. Add the crushed biscuits, sweetened condensed milk, and fruit puffs (or Eskimo lollies) to the bowl with the melted butter. Mix well until all the ingredients are thoroughly combined.
4. Line a rectangular baking dish with baking paper or aluminum foil.
5. Pour the mixture into the lined baking dish and use a spoon or spatula to press it down firmly and evenly.
6. Sprinkle desiccated coconut over the top, pressing it lightly into the mixture to help it stick.
7. Place the dish in the refrigerator for at least 2 hours, or until the cake becomes firm.
8. Once the Lolly Cake is set, remove it from the refrigerator and cut it into slices or bars.
9. Serve and enjoy! Store any leftover Lolly Cake in an airtight container in the refrigerator.
Note: Lolly Cake is a popular New Zealand treat that features colourful fruit puffs or Eskimo lollies. Feel free to customise the recipe by adding other lollies or candies of your choice.
