Meteor Rock Cookies

Supplies:
125g butter (softened)
½ cup brown sugar
½ cup white sugar
1 egg
1 tsp vanilla essence
1½ cups plain flour
½ tsp baking soda
1 cup chocolate chips or chunks
½ cup crushed biscuits (e.g. digestives or cookies)
½ cup mini marshmallows or broken marshmallows
Optional: ¼ cup cocoa powder for darker “space rock” colour
Steps:
Preheat Oven: Preheat oven to 180°C (bake) and line a baking tray with baking paper.
Mix Wet Ingredients: In a large bowl, cream butter and sugars together until light and fluffy. Add egg and vanilla, mixing until smooth.
Add Dry Ingredients: Stir in flour and baking soda (and cocoa if using) until a thick dough forms.
Add the Meteor Mix: Fold in chocolate chips, crushed biscuits, and marshmallows. The dough should look chunky and uneven like a rocky meteor!
Shape and Bake: Drop rough spoonfuls of dough onto the tray – no need to smooth them. The bumpier the better!
Bake for 10–12 minutes or until golden around the edges but still soft in the middle.
Cool and Enjoy: Let cool slightly before moving to a rack. The marshmallow and chocolate will create gooey “craters.”
