Mini Baked Churro Bites Recipe

Ingredients
For the dough:
1 cup water
50g butter
1 tablespoon sugar
1/4 teaspoon salt
1 cup plain flour
1 teaspoon vanilla essence
2 eggs
For the cinnamon sugar coating:
1/2 cup sugar
1–2 teaspoons ground cinnamon
50g melted butter (for brushing)
Instructions
1. Preheat and Prepare
Preheat your oven to 200°C (180°C fan bake). Line a baking tray with baking paper.
2. Make the Dough
In a saucepan, combine water, butter, sugar, and salt. Bring to a boil.Remove from heat and quickly stir in the flour. Mix until it forms a ball and pulls away from the sides.Let it cool for 5 minutes.
3. Add Vanilla and Eggs
Add vanilla, then beat in eggs one at a time. The dough will look lumpy at first — keep stirring until smooth.
4. Pipe or Spoon Onto Tray
Spoon the dough into a piping bag with a star tip, or just drop small spoonfuls onto the tray to make bite-sized blobs.
5. Bake
Bake for 10–12 minutes or until puffed and lightly golden. You can bake slightly longer for extra crispness.
6. Cinnamon Sugar Coating
While warm, brush each churro bite with melted butter and roll in cinnamon sugar.
