Supplies:
2 cups self-raising flour
2 tbsp sugar
1 ½ cups milk
2 eggs
2 tbsp melted butter (plus extra for cooking)
Food colouring (red, orange, yellow, green, blue, purple)
Mixing bowls
Whisk
Frying pan
Steps:
In a large bowl, whisk together flour, sugar, milk, eggs, and melted butter until smooth.
Divide the mixture evenly into six small bowls.
Add a different food colouring to each bowl — red, orange, yellow, green, blue, and purple — and stir until well combined.
Heat a lightly buttered frying pan over medium heat.
Pour a small amount of one coloured batter into the pan and cook until bubbles form on top, then flip and cook the other side. Repeat for each colour.
Stack the pancakes in rainbow order: purple on the bottom, then blue, green, yellow, orange, and red on top.
Serve warm — optionally with whipped cream, syrup, or fruit.
