Recipe Instructions: Alfajores

Supplies

  • Mixing bowls

  • Wooden spoon/spatula

  • Measuring cups/spoons

  • Baking trays

  • Baking paper

  • Rolling pin

  • Round cookie cutter (or glass)

Ingredients

  • 250 g plain flour

  • 150 g cornflour (cornstarch)

  • ½ tsp baking powder

  • 200 g butter (softened)

  • 150 g caster sugar

  • 2 egg yolks

  • 1 tsp vanilla essence

  • 1 can Nestlé Highlander Caramel Filling

  • Optional: desiccated coconut, icing sugar for dusting

Steps

  1. Make the dough:

    • Cream butter and sugar together until light and fluffy.

    • Add egg yolks and vanilla, mix well.

    • Sift in flour, cornflour, and baking powder. Mix until a soft dough forms.

  2. Chill and cut:

    • Wrap dough in cling film, refrigerate for 30 minutes.

    • Roll out dough on a floured surface to about 5 mm thick.

    • Cut into small circles using a cookie cutter or glass.

  3. Bake:

    • Place on baking trays lined with paper.

    • Bake at 180°C for 8–10 minutes, until just set (they should stay pale).

    • Cool on a wire rack.

  4. Assemble:

    • Spread a generous spoon of Highlander Caramel Filling onto one biscuit, sandwich with another.

    • Roll edges in coconut if desired.

    • Dust with icing sugar.
