Supplies
Mixing bowls
Wooden spoon/spatula
Measuring cups/spoons
Baking trays
Baking paper
Rolling pin
Round cookie cutter (or glass)
Ingredients
250 g plain flour
150 g cornflour (cornstarch)
½ tsp baking powder
200 g butter (softened)
150 g caster sugar
2 egg yolks
1 tsp vanilla essence
1 can Nestlé Highlander Caramel Filling
Optional: desiccated coconut, icing sugar for dusting
Steps
Make the dough:
Cream butter and sugar together until light and fluffy.
Add egg yolks and vanilla, mix well.
Sift in flour, cornflour, and baking powder. Mix until a soft dough forms.
Chill and cut:
Wrap dough in cling film, refrigerate for 30 minutes.
Roll out dough on a floured surface to about 5 mm thick.
Cut into small circles using a cookie cutter or glass.
Bake:
Place on baking trays lined with paper.
Bake at 180°C for 8–10 minutes, until just set (they should stay pale).
Cool on a wire rack.
Assemble:
Spread a generous spoon of Highlander Caramel Filling onto one biscuit, sandwich with another.
Roll edges in coconut if desired.
Dust with icing sugar.
