Red Velvet Cake



Ingredients:

For the cake:

  • 225g unsalted butter, softened

  • 2 cups caster sugar

  • 4 large eggs

  • 2 teaspoons vanilla extract

  • 2 ½ cups all-purpose flour

  • 2 tablespoons cocoa powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup buttermilk

  • 2 tablespoons red food coloring

  • 1 teaspoon white vinegar

For the cream cheese frosting:

  • 250g cream cheese, softened

  • 125g unsalted butter, softened

  • 3 cups icing sugar

  • 1 teaspoon vanilla extract

Instructions:

For the cake:

  1. Preheat the oven to 180°C (350°F). Grease and line two 20cm (8-inch) round cake pans with baking paper.

  2. In a large mixing bowl, cream the softened butter and caster sugar together until light and fluffy.

  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing well after each addition.

  6. In a small bowl, combine the red food coloring and vinegar. Add this mixture to the cake batter and mix until well incorporated.

  7. Divide the batter evenly between the prepared cake pans.

  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  9. Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then transfer them to a wire rack to cool completely.

For the cream cheese frosting:

  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.

  2. Gradually add the icing sugar, one cup at a time, mixing well after each addition.

  3. Stir in the vanilla extract and mix until the frosting is light and fluffy.

Assembling the cake:

  1. Place one cake layer on a serving plate or cake stand.

  2. Spread a generous amount of cream cheese frosting over the top of the first cake layer.

  3. Place the second cake layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.

  4. If desired, decorate the cake with additional red velvet cake crumbs, sprinkles, or other decorations.

  5. Slice and serve the delicious homemade Red Velvet Cake!
