Weetbix Slice Recipe

Supplies/Ingredients:

  • 6 Weetbix, crushed

  • 1 cup desiccated coconut

  • 1 cup self-raising flour

  • ½ cup brown sugar

  • 2 Tbsp cocoa powder

  • 150g butter, melted

  • 1 tsp vanilla essence

Icing:

  • 1 ½ cups icing sugar

  • 2 Tbsp cocoa powder

  • 2 Tbsp hot water

  • 1 Tbsp butter, softened

Steps:

  1. Preheat Oven

    • Set oven to 180°C (fan bake 160°C). Grease and line a slice tin (approx. 20 x 30cm).

  2. Mix Dry Ingredients

    • In a large bowl, combine crushed Weetbix, coconut, flour, brown sugar, and cocoa.

  3. Add Wet Ingredients

    • Stir in melted butter and vanilla. Mix until combined.

  4. Bake the Base

    • Press mixture firmly into the lined tin.

    • Bake for 20–25 minutes until firm.

  5. Make the Icing

    • Sift icing sugar and cocoa into a bowl. Add butter and hot water. Mix until smooth.

  6. Ice While Warm

    • Spread icing over the warm slice. Sprinkle with extra coconut if desired.

  7. Cool & Slice

    • Allow to cool fully, then cut into squares or rectangles.
