Weetbix Slice Recipe

Supplies/Ingredients:
6 Weetbix, crushed
1 cup desiccated coconut
1 cup self-raising flour
½ cup brown sugar
2 Tbsp cocoa powder
150g butter, melted
1 tsp vanilla essence
Icing:
1 ½ cups icing sugar
2 Tbsp cocoa powder
2 Tbsp hot water
1 Tbsp butter, softened
Steps:
Preheat Oven
Set oven to 180°C (fan bake 160°C). Grease and line a slice tin (approx. 20 x 30cm).
Mix Dry Ingredients
In a large bowl, combine crushed Weetbix, coconut, flour, brown sugar, and cocoa.
Add Wet Ingredients
Stir in melted butter and vanilla. Mix until combined.
Bake the Base
Press mixture firmly into the lined tin.
Bake for 20–25 minutes until firm.
Make the Icing
Sift icing sugar and cocoa into a bowl. Add butter and hot water. Mix until smooth.
Ice While Warm
Spread icing over the warm slice. Sprinkle with extra coconut if desired.
Cool & Slice
Allow to cool fully, then cut into squares or rectangles.
